Ingredients:
1 large tin (net weight of approx. 825g) peaches, drained of syrup
8 small plum tomatoes of assorted colours, quartered
8 strawberries, trimmed and quartered
4 sprigs mint, for garnish
Method:
1. Place the peaches in a food processor and blend until smooth. Refrigerate.
2. Divide the cooled peach soup into serving bowls and divide the tomatoes and strawberries between them.
3. Garnish with the mint sprigs and serve immediately.
