Ingredients:
2 medium sized squids, cleaned and heads removed
1 egg, beaten
Salt and pepper
Fried rice:
1 cup cooked rice
2 tablespoons vegetable oil
1 Chinese sausage, diced
½ large onion, diced
2 cloves garlic, minced
2 dried shitake mushroom, soaked in water for one hour and dice
1 tablespoon light soya sauce
Salt and pepper
Method:
1. To prepare the fried rice, fry the onion, Chinese sausage in the oil over medium heat until the onions have softened.
2. Add the garlic and mushroom and continue frying until fragrant.
3. Add the rice, soya sauce, a pinch of salt and pepper and stir until the rice is separated and coated with the oil. Allow to cool.
4. Stir the beaten egg into the fried rice.
5. Stuff the squid with the rice (be careful not to overstuff) and secure the opening with toothpicks.
6. Prepare the steamer.
7. Add some salt and pepper on the squid before steaming for 15 minutes.
8. Slice thickly before serving.
