Homemade soy milk

Ingredients:
Soy beans 150 g (51/3 oz), soaked for 6 hours
Water 1.5 litres (48 fl oz / 6 cups)
Sugar 125 g (41/2 oz) or to taste


Method:
1. Drain and place soy beans in a blender (food processor) with 500 ml (16 fl oz / 2 cups) water. Blend into a smooth pulp.

2. Pour pulp into a muslin bag or cloth strainer with remaining water and squeeze to obtain milk. Discard dry pulp.

3. Heat soy milk in a saucepan and bring to the boil. Stir in sugar and return milk to the boil. Remove from heat and serve hot or leave to cool before refrigerating to serve cold. Soy milk can be stored refrigerated for up to 3 days.
