Ingredients:
1 dragonfruit (red or white flesh), skin removed and flesh cut into small pieces
1 pandan leave, knotted
2 tablespoons castor sugar
4 large pieces sliced bread
2 tablespoons melted butter
Method:
1. Place the dragon fruit flesh, pandan leave and sugar in a saucepan and simmer over low heat for about ½ an hour, until the dragon fruit is soft and the mixture is thick (like syrup).
2. Mash up with a fork until thick paste is formed.
3. Preheat the oven to 180 ْC.
4. Brush the toast lightly with the melted butter and bake for 5-8 minutes until the toast is nicely browned.
5. Serve the toast with a spread of the dragon fruit jam.
