Mexican Egg Cups

Ingredients:
1 6-inch corn tortilla
1 large egg

1/2 cup half and half

1 Tablespoon salsa

1/3 cup shredded Cheddar or Mexican blend cheese

salt and pepper - to taste


Methods:
1.Preheat over to 350 degrees.

2.Prepare a 4-inch ramekin or a large muffin pan cup by spraying generously with cooking spray.

3.Beat the egg with the half and half and a dash of salt and pepper. Pour mixture into tortilla cup. Spoon in the salsa and sprinkle to with cheese.

4.Bake at 350 degrees for 30-45 minutes or until a toothpick inserted into the center comes out clean.

5.Serve warm with salsa on the side.
