Steamed Prawns Thai Coconut

Ingredients:
2 whole Thai sweet coconut (top already cut)
6 fresh medium sized tiger prawns (with head and shell still intact)
1 chili, deseeded and julienned
1 cup seafood/vegetable stock
1 stalk lemon grass
2 Kaffir lime leaves

Method:
1. Pour out the coconut juice in a bowl, keep the coconut lids.

2. Prepare the steamer (large enough to hold the coconuts).

3. Divide the ingredients equally and place them in the coconuts.

4. Top up with the coconut juice and cover with the lid.

5. Steam for 30 minutes.

6. Serve whole as a soup.
