Red bean porridge

Ingredients:
100g red beans
4-6 cups water
4 pandan leaves
60g sugar
A pinch of salt
30g dried longans (optional)


Method:
1. Wash red beans and add in the water. Keep aside for a few hours – this will soften the beans and plump them up so you do not have to cook them for a long time.

2. Wash the pandan leaves and tie the leaves together in a knot.

3. Put the pandan leaves, red beans with water and the sugar and salt into a pot and bring to a boil over high heat.

4. Turn heat down to medium and simmer till the beans are cooked till soft. This will take around 1 hour or more. If you like the beans to be mushy, keep on boiling longer. If the mixture gets too dry, add more water, preferably boiling water.

5. 30 minutes before the end of the cooking time, add the dried longans.

6. At the end of cooking time, test for sweetness and add more sugar if you like the porridge to be sweeter.

7. May be served hot or chilled.
