Ingredients:
8 large prawns, peeled with the head and tail still intact
3 tablespoons melted butter
Salt and pepper
Topping:
8 tablespoons nestum
1 handful curry leaves
2 chili padi, thinly sliced (optional)
1 teaspoon salt
1 tablespoon sugar
80g salted butter
Method:
1. Preheat the oven to 230ْC.
2. Brush the prawns with the melted butter and season with salt and pepper.
3. Roast in the oven for 10-12 minutes, until the prawns are fully pink.
4. For the topping, melt the butter over medium heat until it starts foaming.
5. Add the curry leaves and chili (be careful the oil in the butter will spit) and fry briefly for about 10 seconds before adding the cereal (you may use the Nestum cereal).
6. Fry until the cereal starts turning slightly brown. Add the salt and sugar before reserving in a bowl.
7. Serve the roasted prawns with a tablespoon of the cereal topping.
