2 tablespoons peanut oil
1 tablespoon sesame oil
1 medium onion, minced
2 cloves garlic, minced
3 cups cooked white rice
8 ounces white crab meat
1/2 cup green peas
3 tablespoons fish sauce
2 eggs, lightly beaten
5 green onions, sliced
Salt and pepper to taste
Directions:
- Heat 1 tablespoon peanut oil in a wok, add the onion and garlic, and stir fry for a minute on high heat.
- Add the crabmeat and 2 tablespoons fish sauce; cook 4 to 5 minutes, until the crab is heated through. Remove from wok and set it aside.
- Add the remaining peanut oil to wok and heat. Add the eggs and cook until the eggs are done.
- Stir the rice, crabmeat and green peas into the eggs. Add the remaining fish sauce and sesame oil. Keep stirring and mixing the rice with ingredients. Season to taste with salt and pepper.
- Add the green onions just before removing from the heat. Serve hot.
