Tamarind prawns

Ingredients:
½ kg medium sized prawns
2 tablespoons tamarind paste
1 teaspoon salt
1 teaspoon sugar

Method
1. Rub tamarind and other seasonings well into the unpeeled whole prawns and leave for a couple of hours in the fridge to marinate.

2. Heat 4 tablespoons vegetable oil in a wok. When oil is smoking hot, remove prawns from the marinade and fry, searing the outsides.

3. When evenly browned, serve on its own or with rice.



Tip: When using tamarind, do add a bit of sugar to balance out the tartness of the paste.
