Fried rice with pineapple

Ingredients:
Pineapple 1, approximately 2 kg (4 lb 6 oz)
Cooking oil 60 ml (2 fl oz / 1/2 cup)
Garlic 1 clove, peeled and crushed
Onion 1 large, peeled and minced
Red chillies 3, seeded and sliced
Lean pork 125 g (41/2 oz), sliced
Dried prawn (shrimp) powder (optional) 1 tsp
Eggs 2, lightly beaten
Boiled Basmati rice 400 g (14 oz)
Prawns (shrimps) 200 g (7 oz), peeled and cleaned
Spring onions (scallions) 3, chopped
Salt to taste


Method:
1. Lie pineapple on its side. Slice off one-quarter lengthways and set aside to use as lid. Scoop out pineapple flesh and discard core. Cube 500 g (1 lb 1/2 oz) pineapple flesh and save remaining pineapple flesh for other use.

2. Heat oil in a frying pan. Fry garlic, onion and chillies until light brown.

3. Add pork and cook for 1 minute, stirring constantly.

4. Stir in eggs and dried prawn powder, if desired.

5. Add rice, prawns, pineapple and spring onions. Cook for 1 minute, stirring and tossing ingredients. Season with salt to taste.

6. Spoon hot fried rice into pineapple shell and cover with lid so the rice absorbs the flavour of the pineapple. Set aside for 5 minutes before serving.
