Ingredients:
1 piece snapper steak (about 250g)
2 red chillies, reseeded and minced
1 lemongrass, minced
1 tablespoon Thai Basil, chopped
1 teaspoon fish sauce
1 teaspoon olive oil
1 tablespoon water
½ teaspoon sesame seed oil
Method:
1. Preheat the oven to 180ْC.
2. Pound or blend all the ingredients except the snapper.
3. Place the snapper on an oven-proof plate and spread the mixture on the fish.
4. Cook in the oven for 15 minutes (you can test its readiness by separating the flesh of the fish with a fork. If it is flaky, it is ready).
5. Transfer to a clean plate and serve with a drizzle of any leftover sauce.
