Ingredients:
250g chicken breast
2 tablespoons bottled Cajun seasoning
2 tablespoons plain yoghurt
Salt to taste
1 tablespoon finely chopped fresh coriander
1 tablespoon olive oil
1 pita bread
A few cucumber slices
A small handful of shredded carrot
1 tablespoon of mayonnaise
Method:
1. For best results, marinate chicken breast with Cajun seasoning mix, yoghurt, salt and coriander for 6 hours or overnight.
2. To cook the chicken, place it on a small tray lined with aluminium foil, drizzle with olive oil, and place in the oven at 180 deg C for 20 minutes or until cooked through. Allow the chicken to cool before slicing.
3. Slice the pita bread in half and open the pocket. Spread mayonnaise on the side. Stuff it with chicken slices, cucumber and carrot and serve.
