Baked French toast with fruits

Ingredients:
Egg batter
3 large eggs
175ml milk
½ cup sugar
½ teaspoon ground cinnamon powder

Fruit of your choice:
banana / peach /mango
8 slices wholemeal bread or plain white bread
3 tablespoon plain flour mixed with 3 tablespoons water


Coating:
1 cup oats
½ cup nuts (optional)
100g melted butter for drizzling


Method:
1. Preheat oven at 220ْC and grease tray.

2. Mix the egg batter ingredients in a bowl, set aside. In a small bowl, combine the flour and water to make a sticky paste and set aside.

3. On a clean plate, place oats, set aside. Drain peaches from a tin and slice.

4. Lay a slice of bread on a clean surface, top with peach slices.

5. Dab the flour paste all round the edges of the bread and top with another slice of bread to cover. Press the edges to seal, making sure there are no holes.

6. Dip filled bread into egg batter, then coat with oat mixture.

7. Lay the French toast on and drizzle with melted butter over. Bake for 15 minutes or until bread is golden brown, turning over once.

8. Serve warm.
