Best Fruit Pizza


The Crust
  • 1 cup all purpose flour
  • 1/4 cup cornstarch
  • 1/4 cup sugar
  • 1/3 cup butter
  • 1 egg, beaten
Toppings
  • 1 cup fresh strawberries, sliced
  • 1 cup fresh peaches or nectarines, sliced
  • 1/2 cup fresh raspberries
  • 1/2 cup fresh blueberries
Citrus Glaze
  • 1 tablespoon cornstarch
  • 1/4 cup water
  • 3/4 cup freshly squeezed orange juice
  • 2 tablespoons orange zest
  • 2 tablespoons lemon zest
  • 2 tablespoons lemon juice
Methods:
  1. Preheat the oven to 350°
  2. Combine the flour, cornstarch and sugar.
  3. Rub the butter into the mixture with your fingertips.
  4. Add an egg.
  5. Shape the base with your hands to make a circle about a half Inch thick.
  6. Bake for ten minutes until lightly browned.
  7. Arrange fresh fruit decoratively on the base.
  8. To make the glaze, mix together all the ingredients except the zests in a pan.
  9. Boil for one minute.
  10. Pour the glaze over the fruit pizza and then scatter the zests over it.
