Steamed prawns with jasmine tea

Ingredients:
500g prawns, medium size, trimmed

Marinade:
10g jasmine tea leaves and 60ml hot boiling Water
1 teaspoon abalone sauce
1 teaspoon sesame oil
1 tablespoon Chinese wine
1 teaspoon corn flour
½ teaspoon pepper
Salt to taste


Garnishing:
Coriander leaves


Method:
1. Soak tea leaves in hot boiling water for 5 minutes. Sieve.

2. Mix the tea with the rest of the marinade ingredients and season to taste.

3. Place prawns in a heat proof plate and pour over the marinade.

4. Steam over high heat for 10-12 minutes or until prawns are cooked. Do not overcook the prawns.

5. Garnish with some coriander leaves. Serve with steamed white rice.
