Ingredients:
1 skinless and boneless chicken breast
2 cups of softened agar agar (softened first in water and cut into short lengths)
A few drops of sesame oil
1 teaspoon light soya sauce or to taste
1 tablespoon rice vinegar
1 packet of washed mixed salad leaves
Sliced red chilli and black sesame seeds
Method:
1. Poach chicken in a cup of water till flesh turns white. When cool, shred it.
2. Soak dried agar agar strips in water till softened. Drain and soak for 10 minutes in boiling water, before draining the second time.
3. Place shredded chicken and softened agar agar strips in a bowl and season with sesame oil, soya sauce and rice vinegar. Adjust seasoning to taste. Leave for a while for flavours to develop.
4. Place salad leaves on a plate and top with the marinated chicken mixture. Garnish with black sesame seeds and red sliced chilli.
