beef with Szechuan pepper sauce

Ingredients:
2 sirloin steaks, approximately 250g each
Salt
4 tablespoons canola oil
2 tablespoons Szechuan peppercorns, crushed with a mortar and pestle
2 tablespoons oyster sauce
100g wild rocket leaves


Method:
1. Season the beef with some salt on all sides.

2. On a very hot pan, add the oil and fry the steaks for about 3 minutes per side (for medium). Reserve and allow to rest for a couple of minutes as you prepare the sauce.

3. Discard some oil in the pan if there is too much (you just need a little to fry the peppercorns).

4. Add the peppercorns to the oil and fry for about 1 minute until fragrant.

5. Add the oyster sauce and a splash of water to thin it out a little.

6. Slice the beef and divide on plates with some wild rocket leaves. Add any beef juices to the sauce.

7. Drizzle some of the peppercorn sauce and serve immediately.
