Ingredients:
6 x 150g fresh black cod
2 cloves garlic, minced
60g breadcrumbs
100g freshly grated parmiggiano reggiano
½ cup extra virgin olive oil
Salt and pepper, to taste
10g fresh Italian parsley, minced
2 tablespoons olive oil (if you are frying the fish prior)
Method:
1. Prepare the breadcrumbs by mixing the breadcrumbs, parsley, parmiggiano, and minced garlic.
2. Add the extra virgin olive oil and mix with your fingers, ensuring a loose moist mixture is formed.
3. Preheat the oven to 200ْC.
4. Season the cod steaks with some salt and pepper.
5. If you prefer frying the cod, heat some oil in a pan over high heat until smoking before adding the cod pieces in.
6. Fry briefly until lightly browned at the sides.
7. Place the cod in oven proof dishes and pat the top with the breadcrumb mixture.
8. Bake in the preheated oven for 13 minutes (16 minutes if you choose not to fry the cod beforehand) until the top turns brown.
9. Divide and serve the cod with the browned cheesy breadcrumbs.
