Ingredients:
12 prawns, peeled and deveined
2 mangoes, diced
2 segments of pomelo, loosened pulp only
12 roasted cashew nuts
Juice of 2 large limes
1 teaspoon fish sauce
1 red chili, deseeded and thinly sliced
Cracked black pepper, to taste
Method:
1. With a hot pan, sauté the prawns in a little oil until they turn pink.
2. In a bowl, mix the cooked prawns, diced mangoes, pomelo, chili, cashew nuts, lime juice and fish sauce.
