Eggnog trifles


ingredients:

  • 300g loose frozen mixed fruits of the forest, defrosted
  • 3tbsp icing sugar
  • 3tbsp Grand Marnier liqueur
  • 12 amaretti biscuits
  • 6tbsp berry compote
  • 250g mascarpone cheese
  • 50g caster sugar
  • 300ml ready-made custard
  • 3-4 tbsp advocaat liqueur
  • ¼ tbsp vanilla extract
methods:

  1. In a bowl, mix the berries with the icing sugar and Grand Marnier and leave until required. 
  2. Divide the amaretti biscuits between 6 glasses and top with 1tbsp of the compote then half of the mixed berries.
  3. Mix the mascarpone with the caster sugar and spoon over the berries then chill the trifles for 20 mins.
  4. Mix the custard, advocaat and vanilla together to create the eggnog.
  5. Remove the trifles from the fridge, add the remaining berries then top with the eggnog, finish with a few extra berries and serve.
