Boozy trifle
Ingredients
- 300g Madeira cake
- 3tbsp sweet dessert wine
- 200g blueberries
- 200g strawberries
- 200g raspberries
- 500ml mascarpone
- 3tbsp icing sugar
- 2 limes
- 50g light muscovado sugar
Method
- Break a 300g Madeira cake into rough 5cm chunks and place in the bottom of a glass dish. Drizzle 3tbsp sweet dessert wine over the cake. Scatter 200g each of blueberries, strawberries and raspberries on top.
- Mix together two 250ml tubs of mascarpone, 3tbsp icing sugar and the zest of 2 limes. Spoon over the top of the fruit and finish with 50g light muscovado sugar.
